We mentioned that Rumblemum was doing bake sales - she wanted me to share a recipe with you all!
She hadn't heard of these cookies before she moved here, they're called Afghans. They're so simple to make, they don't need eggs (Rumblemum doesn't like eggs) and they're SO NOMMY (so she says. I don't buy it because there isn't any tuna in them)
Here is her favorite recipe for them.
Ingredients for Biscuit:
200g softened butter
½ cup sugar
1 ¼ cup plain flour
¼ cup Cocoa powder
2 cups cornflakes
Ingredients for Icing:
1/8 cup cream (heated)
150g White Choc Bits (or you can use dark choc or milk choc)
Hazelnuts (or walnuts)
Method for Biscuit:
Cream butter and sugar until coats the bowl. Add flour and cocoa and mix gently.
Add cornflakes and stir.
Form into large golfballs and press onto the tray
Bake at 180c for 15mins
Cool
When cold, top with while chocolate ganache and 1 hazelnut.
Ganache:
Heat cream to boiling point but do not boil. Add chocolate and stir till smooth. Cool before coating.

Mum says it sounds yummy but is it single or double cream?
I don't think it matters - it's mostly just to get the chocolate to the right consistency.Rumblemum used just milk once and it worked (but it wasn't as nice as with the cream)

Those do sound yummy! Our mommy will have to do some math to figure out the butter, chocolate and temperature but she can handle that. She might even add a gram or two of chocolate! :)

Interesting...that's not how I make biscuits at all. My recipe calls for:
1 soft mommy belly
2 soft Cory paws, claws in
Purrs
Take paws and knead softly and rhythmically on mommy belly. Start purring after one minute of kneading. Continue for 5 minutes, then curl up into a ball and fall asleep.
Well, the Human thinks these sound just super-nommy, but me? Eh, pfft! No tuna! No salmon! No turkey! What use are they?
SS says it sounds yummy but purrsonally I prefer Cory's recipe.
Mum wants to know if they taste just as good without the hazelnuts? See, she is allergic to nuts.
